Colors are based on Material Design guidelines, this means that the same color is applied to multiple elements, and sometimes is not possible to assign a specific color to specific elements without changing other parts of the site.

Caption medium shortcode is related with text and accent color.

You can change it by going to Appearance -> Customize -> Colors Customization.

If you wanna edit only the caption medium color you should add some custom CSS.
To do so, go to Appearance -> Customize -> Additional CSS and paste this code:

.qt-caption-med .qt-caption-med-center h2 {color:#ff0000}

.qt-caption-med .qt-caption-med-center h4 {color:#ff0000}

You can change #ff000 with your HEX color.
